The untamed South of Champagne: The Côte des Bar

Forget the strict, industrial chalk lines of Reims or Épernay. Anyone traveling to the Côte des Bar, in the far south of the Champagne region, enters a completely different world. Here, in the rolling hills of the Aube department, the landscape feels wilder, greener, and more intimate. Geologically, this region is closer to the limestone slopes of Chablis than to the rest of Champagne. The soil consists of the legendary Kimmeridgian marl: a prehistoric blend of dense clay, limestone, and fossilized oyster shells. This is the undisputed kingdom of Pinot Noir, which develops an unparalleled richness, gastronomic power, and sharp, saline minerality on these soils. The Côte des Bars is the playground of true pioneers — independent vignerons who leave commercial conventions behind to let the pure, naked voice of their terroir speak.

Breaking the Lineage

In the picturesque village of Essoyes — world-famous because the Impressionist painter Auguste Renoir kept his favorite summer studio here and painted some of his greatest masterpieces — lies the estate of Axelle and Sébastien Guenin. Although the family has been deeply rooted in local viticulture for eleven generations, the year 2015 marked a crucial turning point. After extensive winemaking studies in Beaune (Burgundy) and apprenticeships at several top French estates, Sébastien decided it was time to forge his own path. No longer would they anonymously supply grapes to the big, famous Champagne houses. It was time to bottle their own vision. While the family estate is substantial, they select only the finest, limestone-rich parcels for their artisanal cuvées. Production is therefore extremely limited (just 10,000 to 20,000 bottles a year). Here, every single bottle is literally handled by the winemaker.

The philosophy: living soils and unpolished purity

At Bottleneck, we look for winemakers who don't manipulate in the cellar, but listen in the vineyard. Axelle and Sébastien fit that profile perfectly. The estate is completely pesticide-free and certified Organic. "Making wine is just like painting," Sébastien smiles with a subtle nod to Renoir. "If you don't respect nature's colors, the final result becomes flat and soulless."

In the cellar, this philosophy translates into patience and minimal intervention. Both alcoholic and malolactic fermentations take place almost entirely in used French oak barrels (fûts de chêne), carefully selected from various forests. This lends the champagnes their signature vinous, broad structure and deep layers, without the wood ever overpowering the fruit. To preserve the pure expression of the Pinot Noir and Chardonnay fruit, the cuvées (such as Nature d'Argile) are consistently crafted as Brut Nature (0 g/l dosage). No added sugar, no makeup, and an absolute minimum of sulfites.
